Kara Behlke is a registered dietitian at the Marion, Hy-Vee who offers a wealth of nutritionexpertise for all her customers including weight management, celiac disease, heart health, fructose intolerance, diabetes and much more. Kara obtained her Bachelor of Science degree in dietetics from the University of Nebraska-Lincoln and went on to complete her dietetic internship and clinical work at Yale Medical Center in New Haven, Connecticut.

 

Kara’s passion for cooking started at a young age and has developed into a passion for making people feel better about themselves and what they are eating. Rooted with a deep understanding of nutrition and how the body works Kara enjoys helping customers find new and tasty ways to make healthy eating enjoyable and help reduce their risk for disease. Kara believes that food should taste delicious, look amazing and make you feel your best.

Her unique niche of combining food and nutrition expertise with cooking, marketing and public relations experiences has helped her create innovative programs at her grocery store and deliver health messages in a fun and appealing way. Kara believes food is one component of a healthy lifestyle that individuals have the power to control. Her message is simple and genuine: “Feeling better is easier than you think.” Kara hopes to make her community a healthier place by donating her time and expertise to working with numerous community groups, schools, companies, parents and community leaders.

Baked Greek Yogurt with Tropical Salsa


Prep Time: 15 minutes
Refrigerate: 1 hour
Cook Time: 30 minutes


Tropical Salsa:


POUR yogurt into a sieve set over a bowl. Cover. Let stand in refrigerator for at least 1 hour to allow yogurt to drain. Discard liquid in bowl. Mix thickened yogurt and sweetened condensed milk in large bowl until smooth. Pour into medium baking dish or 6 individual ramekins.


BAKE in preheated 350°F oven 20 to 30 minutes or until set. If using ramekins, check at 20 minutes.


MEANWHILE, for the Tropical Salsa, toss fruit in large bowl. Add sugar, lime juice and cinnamon; toss to coat well. Serve baked yogurt warm topped with Tropical Salsa and ginger.
